Albacore Tuna Linguine


(Serves 2-3)

1 can Ocean Naturals Albacore Solid Tuna in Olive Oil
2 cups Sliced Yellow Onions
2 tbsp Capers
6 Whole Garlic Cloves Crushed
¼ tsp Red Chili Flakes
1 cup Sweet Red or Yellow Cherry Tomatoes Cut in Half
2 tsp Parsley Chopped
1 cup clam juice (fresh or canned)
4 tsp Extra Virgin Olive Oil
8oz Dried Linguine pasta


Bring a large pot of salted water to a boil.

Then, heat a large pan on medium high heat. Once the pan is hot, add olive oil, onion, capers, garlic and sauté until light golden brown. Once the onions are nicely caramelized, add tomatoes, parsley, chili flakes and clam juice. Set heat to medium and reduce sauce by half. Once the sauce thickens, turn heat off.

Cook your linguine per package instructions. When you pasta is ready, add to your pan the tomato sauce. Turn the heat back on to medium setting, add your can of tuna and gently toss all ingredients together. Once the sauce starts to simmer, turn off the heat. If your pasta sauce seems a little thick, you can add a splash of water.

Add salt to taste and garnish with some fresh parsley and a drizzle of extra virgin olive oil.
